What is Caviar, also known as caviare, originates from the Persian word “khâvyâr” (meaning “egg-bearing”). It’s a delicacy made from salt-cured roe (fish eggs) of the sturgeon family. Traditionally, caviar refers to roe from wild sturgeon found in the Caspian Sea and Black Sea, including varieties like beluga, ossetra, and sevruga caviars. These eggs can be large and soft (like beluga caviar) or smaller and golden (like sterlet caviar).
